Chungha is a traditional liquor that was introduced in 1986 and has been popular in South Korea ever since. It is slowly fermented for a month at temperatures between 12 to 15 degrees Celsius, which highlights the essence of thrice-polished rice and results in a clear taste without impurities or off-flavors. A cooling filtration system is utilized to remove bitterness and alcohol odors, so the end result is a smooth and clean character. The amino acids that are present in Chungha enhance the flavor of dishes, making for a crisp finish.
